These roasted biryani chicken legs are packed with so much flavour, it’s hard to believe they’re so easy to make.
Taken from new book, Ramadan Express by award-winning cookbook author Lina Saad, which brings together more than 85 recipes in a practical guide for those wishing to cook imaginatively during Ramadan, but with little fuss.

8-10 chicken legs washed and cleaned with lemon and salt
5tbsp biryani spices
5tbsp natural yoghurt
1tsp salt or to taste
Couple of cloves of garlic peeled and crushed
20ml vegetable oil
For the Biryani Rice
2 mugs basmati rice rinsed with warm water quickly just before cooking
1 onion, peeled and fined diced
1 red pepper, washed and finely diced
1 green pepper, washed and finely diced
Salt to taste
1 cube of stock
1tbsp biryani spice
Pinch of saffron – diluted in 20ml rose water
Drizzles of oil for cooking
Step 1. Marinade the chicken with the salt, yoghurt and the biryani spice preferably the night before.
Step 2. Place in a roasting tray with the vegetable oil and cook for about 40 minutes at 180C.
Method of Biryani Rice
Step 3. Meanwhile, drizzle the vegetable oil into the hot pan and sauté all the finely diced vegetables, this process should take no more than 10-12 minutes. Start on high heat then reduce to medium with occasional stirring.
Add the rice and give it a stir, then add all the seasoning with the stock cube.
Step 4. Add the 4 mugs of boiling water and give it a quick stir, then reduce the heat to lowest possible.
Step 5. Pour the 20ml of the rose water and saffron into the pot and leave to simmer for about 30 minutes with the lid on or until the rice is completely mature.
Step 6. Serve this with handful of roughly chopped coriander, chicken and top with the yoghurt and biryani salad.
